Sunday's indoor picnic yielded a lot of leftovers (no cupcakes though, funnily enough!). For dinner on Monday night, I fried up some surplus winter potatoes (no extra oil necessary) until browned, added some strips of soy bacon and tossed with mixed lettuce leaves. It was an entirely new flavour and texture compared to the potatoes' previous incarnation, and heartily enjoyed.
Your post reminded me how wonderful warm salads can be in winter. I always dismiss salad as a summer food yet with the addition of the potatoes and bacon it's the perfect way to get your winter veggies in when you're tired of soups and stews.
ReplyDeleteTruffle, we have one roast vege salad that appears frequently on our table in winter, but it took these leftovers for me to venture beyond that!
