The coconut oil distributed itself a bit unevenly in the food processor but ultimately the dough rolled quite well. I decided not to make a lattice with my flimsy pastry and instead made biscuit-cutter polka dots. This pie was tasty, less stressful and there was leftover dough to make almost an entire second pie.

There's a pic of it here.Cindyhttps://www.blogger.com/profile/07147906610629741961noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-60076928610542535492017-06-27T21:50:22.455+10:002017-06-27T21:50:22.455+10:00Ah, got it - I don't think I've ever encou...Ah, got it - I don't think I've ever encountered that before!Cindyhttps://www.blogger.com/profile/07147906610629741961noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-72612352367170892812017-06-26T20:21:22.735+10:002017-06-26T20:21:22.735+10:00Oops I don't mean pastries with all nuts - jus...Oops I don't mean pastries with all nuts - just with a few spoonfuls of nuts for a bit of extra richness, which might help structure too.Johanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-43524440764797899182017-06-25T09:43:50.031+10:002017-06-25T09:43:50.031+10:00Hey, thanks for suggesting some different vegan-fr...Hey, thanks for suggesting some different vegan-friendly fats! Sadly the baking paper wasn't enough to preserve my pastry as I flipped it into the pie dish...!Cindyhttps://www.blogger.com/profile/07147906610629741961noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-23350515995393860502017-06-24T17:55:24.932+10:002017-06-24T17:55:24.932+10:00Nuttelex always seems to create a softer, more fra...Nuttelex always seems to create a softer, more fragile pastry. Freezing it can help when rolling it out (but only slightly). A better bet might be swap it out for a sturdier vegan fat like coconut oil or even an olive oilNixhttps://www.blogger.com/profile/04938217853893478701noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-87673874515160781792017-06-21T23:40:33.388+10:002017-06-21T23:40:33.388+10:00I am sure you made all takers very happy - looks b...I am sure you made all takers very happy - looks beautiful. Some of the vegan pastry recipes I read have ground almonds in them (if you are willing to go into the nut minefield of allergies). It keeps from dusting everything with flour, but also useful for picking up the pastry and moving it to the pie plate.Theresahttps://www.blogger.com/profile/08526136978255752695noreply@blogger.comtag:blogger.com,1999:blog-33131521.post-55887099085057497802017-06-21T18:17:34.338+10:002017-06-21T18:17:34.338+10:00It looks great despite your struggles!
